Crockpot Chili

Chili is a very easy dish to make. I don’t know how many of you have a crock pot, so I’ll also say what to do without one, ‘cause I used a crock pot! C= You could eat this with bread and veggies or by itself! (You could also make this a vegetarian dish by not adding the meat and buillon.)



Ingredients:


1 cup diced onions
1/8 tsp cayenne pepper
2 tbsp chili powder
3-5 cans of beans; it doesn’t matter how many you put in, but you might need to increase the rest of your ingredients if you use a lot of beans. (I used kidney beans, garbanzo beans, and black beans)
A dash of lemon juice
A generous serving of garlic
1 tsp of coriander
Salt + pepper
Red pepper flakes
1 tbsp chicken bouillon
Fresh parsley to garnish
1 package of ground turkey; thawed
1 can of tomato paste
1 can of diced tomatoes
6 carrots chopped into bite size
4 celery stalks; diced


Method:


Open the ground turkey package and put into the crock pot or pot. Open the cans of beans and pour into a colander to wash the beans. Pour into crock pot/pot. Open the can of diced tomatoes and pour into the pot. Fill the can with water and pour into the pot; repeat. With a spoon or spatula break the turkey apart into bite size pieces. Add the diced onions, cayenne pepper, chili powder, lemon juice, garlic, coriander, salt + pepper, red pepper flakes, chicken bouillon, carrots, celery, tomato paste, and parsley into the pot. If you’re cooking in a regular pot, cook on medium heat for about 2 hours, stirring every so often. If you’re using a crock pot, set the timer for 8 hours and stir every so often.

Frosted Fudge Brownies





 

Fudge brownies can be made in many different ways. The way I made it is with chocolate chips and chocolate frosting. You could also make it with nuts, or white chocolate chips (my favorite!) This is a super easy recipe, and it’s fun to experiment with. For example, you could dye the frosting green and red for Christmas, or orange for Thanksgiving and Halloween!


Ingredients:½ cup butter
3 oz unsweetened chocolate chips
1 cup sugar
2 eggs
1 tsp vanilla
2/3 cup flour
¼ tsp baking soda
½ cup chopped nuts (optional)
1 batch of your favorite frosting (optional)


Method:

1. In a medium pan melt the butter and chocolate chips over low heat, stirring often. Remove from heat once completely melted and cool.

2. Meanwhile, grease an 8x8x2-inch or 9x9x2-inch baking pan; set aside. Add and stir in the sugar to the chocolate mix until combined, it will look like sand when it’s combined. Add the eggs one at a time, stirring before each addition. Add the vanilla and stir.

3. In a small bowl mix together the flour and baking soda. Add to the chocolate mixture; stir until combined (If desired, pour in nuts) and pour into the prepared pan.

4. Bake in a 350 F oven for 30 min. Cool on a wire rack or in the pan. Once cooled, frost them with your favorite frosting. (Optional)

Chocolate Cream Cheese Frosting:

In a sauce pan melt 1 cup semi sweet chocolate chips over low heat, stirring often. Remove from the heat; cool. In a small bowl, stir two 3 oz packages of softened cream cheese and ½ cup sifted powdered sugar. Add chocolate mix and stir until smooth.

While you’re stirring, you could put
the flour and baking soda in the bowl and
the sugar in the measuring cup. It makes
the job WAY faster and easier!

Thanksgiving Turkey



 
Yeah yeah, I know. It’s a little late to be doing a Thanksgiving turkey, but still! You don’t have to eat turkey only on Thanksgiving. Why, I eat turkey for lunch almost every day! Anyway, if you’ve NEVER cooked a turkey, you might want to have someone with you who knows how to. It’s simple, but the turkey is SUPER heavy!


Ingredients:

Turkey (duh!) Thawed
¼ cup butter
Salt & pepper to taste
2 bay leaves
A few slices of candied ginger
2 cups chicken broth
Onions cut into cubes (or large wedges)
Crushed garlic



Method:

Remove the turkey from its packaging. Be sure to take the giblets and the neck out of the turkeys cavity. (You can save it to prepare it later or discard it.) Rinse the turkey and pat it dry with a paper towel. Place the turkey in the turkey pan and coat it with the butter. Sprinkle the turkey with the salt and pepper. Place the bay leaves, ginger, some more salt and pepper, garlic and onions into the cavity of the turkey. Drizzle the turkey with the chicken broth and put a tin foil tent over the turkey. Pop the turkey into the oven at 325 F for about 4 hours, depending on the size of your turkey. Ours was a 14 lb turkey and we cooked it for 4 and a half hours. Remember to baste the turkey with a turkey baster every so often to keep it moist. Your turkey is done when you test it with a meat thermometer and the internal temperature is 180 F.

Cranberry Chocolate Chip Oatmeal Cookies

The health-nuts favorite cookie! Not really, I made that up, the way I made it, it’s not very healthy. J This was very easy and I recommend it for people who just started baking. It’s really fun to do, and a nice treat to take over to your neighbors for the holidays!


Ingredients:2 cups oatmeal
1 12 oz. package of chocolate chips
¾ cup softened butter
¾ cup dried cranberries (optional)
½ sugar
1 cup brown sugar
1 tsp vanilla
1 tsp baking powder
¼ tsp baking soda
½ tsp ground cinnamon (optional)
¼ tsp ground cloves (optional)
2 eggs
1 ¾ cup flour
 
Method:1:
Add the brown sugar, sugar, baking powder, baking soda,
cinnamon, and cloves. Beat until combined, scraping the
bowl every so often. Add eggs and vanilla and beat until combined.
Add flour and stir. Add oatmeal and stir. If desired, add cranberries
or raisins and chocolate chips. Stir until combined.


2: Using a cookie scooper, drop a spoonful of dough onto In a mixer beat the butter on medium to high speed for 30 sec. a greased cookie sheet 2” apart.

3: Bake at 375 F for 8 to 10 min or until edges are golden. Cool on
cookie sheet for 1 min and transfer to wire rack and let it cool.



You might want to use 2 or 3 cookie sheets
‘cause this recipe makes a bunch of cookies.

Crustless Bacon Quiche

This is a recipe that my mom and I tried out WITHOUT a cookbook! It turned out really well, and it’s one of the easiest recipes ever! You can eat it hot for dinner or cold for breakfast! ... Well, you could have it cold OR hot for breakfast! J




Ingredients:

1 ½ cups cheddar cheese
1 cup mozzarella cheese
1 package bacon - cooked
1 cup chopped sausage - cooked
¼ cup finely diced onions
8 eggs
½ cup milk
1 cup shredded potato
¼ cup flour
1 tsp salt
¼ tsp coarsely ground black pepper
garnish with paprika and red pepper flakes


Method:

First, add eggs and milk. Mix well. Grate the cheese. Add flour and cheese to the egg/milk mix and mix well. Chop the bacon and sausage and add to the mixture. Put the diced onions, shredded potatoes, pepper and salt into the mixture. Mix well. Pour into greased baking dish (like a 9” pie pan) and garnish with paprika and red pepper flakes. Pop in the oven at 350 F for 50 min, or until the eggs are set. Remove from oven and let cool for 5 min, then cut in wedges and serve! J

While the quiche is in the oven, 
why not prepare other things for dinner
as well? I paired it with
asparagus and honey dew
melon slices. Yummy! J

Tea Party Tea & Buttermilk Rusks






This is another recipe of my Ouma Erika’s. It’s supposed to be enjoyed with a cup of English Breakfast Tea, or, like my family calls it, "Tea Party Tea". It’s a really messy treat to make, so roll up your sleeves and let's start baking!
 
Ingredients:

6 1/2 cups self-raising flour
2 eggs
2 cups buttermilk
1 cup margarine
1 cup sugar

**If you only have all purpose flour and don't want to run to the store for self raising flour, simply add 1 ½ tsp baking powder and ½ tsp salt for each cup of flour.

**If you don't have buttermilk, just add 1 tbsp white vinegar or lemon juice to 1 cup of milk. Let it sit for 5 min and use as the recipe indicates. (Use 2 cups of milk and 2 tbsp of white vinegar or lemon juice for this recipe.)
 


 Method:

1.) Mix the sugar and eggs well. Add the buttermilk and mix well.
2.) Rub the margarine into the flour. This is where the messy (and fun) part begins!
3.) Mix the flour and milk mixture with your hands. Knead the dough softly.
4.) Form small golf ball sized balls and line them up side-by-side in a well greased bread pan. (This recipe fills 3 bread pans)
5.) Bake at 325 F for 50 min.
6.) After cooling slightly, break apart and place them directly on the oven racks. Let them dry in the oven at 200 F for approximately 2 hrs.


 


 
Tea Party Tea:

Make a pot of black tea. My family always uses PG Tips.
Before you fill your tea pot with tea, you need to warm up your tea pot.
To do this, pour hot water into your tea pot and put the lid on.
Meanwhile, boil a kettle of water. Once the water boils, pour your
tea pot water out, then fill your tea pot with 2 tea bags and pour the hot water in.
Brew the tea for 2-3 min.
Pour a small amount of milk into your tea cup, add sugar if desired, fill with tea and stir.
Now, you can enjoy your Rusks and Tea!

Ouma Erika's Banana Bread



This is a recipe that was passed down from my Ouma Erika (My mom's mom) to me. It’s yummy and fairly easy. I think the hardest part is mashing the bananas! I’d recommend this recipe for beginner bakers, or people that like bananas. Or bread! =)
 
Ingredients:5 oz. butter (120 grams)
1 cup sugar
2 eggs
3 cups flour
vanilla
1 tsp baking soda
A pinch of salt
120 ml. milk
1 tsp baking powder
4 bananas, smashed
1/2 cup chopped walnuts (optional)
 
Preheat oven to 360 degrees F.
 
 
Method:Mix the butter and sugar in your mixer. Once the mixture is fluffy, add the eggs and mix well. Mix the dry ingredients in a separate bowl and set it aside. Dissolve the baking soda with the milk. Mix the dry ingredients with the baking soda. Add to butter mixture. Mash up the bananas and add to mixture. Add a pinch of salt and the vanilla. Mix well. Be sure to scrape the bowl to ensure everything mixes evenly.  Add the walnuts, if desired, and mix. Pour evenly into two greased bread pans. Put in the oven and bake for 1 hour or until a toothpick inserted in the middle comes out clean.

butter to the banana bread
when you serve it to
make it fancier.

Chocolate Marble Bundt Cake

Chocolate Marble Bundt Cake
I'd recommend this recipe for beginner bakers. It's a super easy recipe, and it's delicious! I found that it was less challenging than other cakes I've made before, but it was equally rewarding. Plus, it looks adorable.

Ingredients:

3/4 c softened butter
2 eggs
2 3/4 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 c sugar
2 tsp vanilla
1 1/4 c milk (I use rice milk)
2/3 c chocolate syrup
1 recipe chocolate icing
a few shakes of powdered sugar (optional)
candied cherries (optional)

You will need:

a cooling rack
spatula
10" fluted tube pan or bundt cake pan
1 small and 1 medium mixing bowl
mixer
measuring cups and spoons
non stick cooking spray
toothpick
sauce pan

Method:

Step one: have butter and eggs sit at room temperature for about 30 minutes. Grease and lightly flour the cake pan. In the medium bowl, mix the baking powder, baking soda, salt and the flour. Set aside.

Step two: With the mixer, beat the butter on low speed, about 30 seconds. Add the sugar and vanilla and beat it until it's fluffy. Add the eggs one at a time. Mix at medium speed for 1 minute after each addition. Scrape the bowl periodically. Add the flour mixture and the milk to the butter alternately, beating on low speed after each addition until mixed. Set aside 2 cups of the batter and pour the rest into the cake pan.

Step three: Mix the chocolate syrup with the 2 cups of reserved batter. Beat until well combined. Pour this into the cake pan on top of the batter. DO NOT MIX!

Step four: Bake in a 350 degree oven for about 50 minutes to until a toothpick inserted in the cake comes out clean. Cool in the pan on a wire rack for 15 minutes. Remove from pan and allow to cool completely.

Step five: Chocolate Icing: While your cake is cooling, prepare the chocolate icing. In a saucepan, heat 1/2 cup of chocolate chips, 2 tbsp butter, 1 tbsp light colored corn syrup and 1/4 tsp vanilla on low heat. Stir constantly until it's melted and smooth. Use immediately.

Once your cake is cooled, place it onto a plate or cake stand. Dust the cake with some powdered sugar and then pour the chocolate icing over the cake. Garnish with candied cherries.
