Angel Food Cake (G-Free AND Dairy Free)



Ok, so my mom went to the doctor to see what else she's allergic to, and it turns out she is allergic to dairy! Now, being allergic to dairy isn't the same as being lactose intolerant. If you're lactose intolerant, you can usually take a little pill to help digest the dairy you're eating. But my mom can't have any dairy products from a cow, because her body can't tolerate the protein in it. She can still drink almond milk and soy and other stuff. Luckily, there are a lot of gluten free and dairy free options out there. So, I made this with almond milk and G-Free flour. I hope you enjoy it!

Ingredients:

1 1/2 cups egg whites (10 -12 large eggs)
1 1/2 cups sifted powdered sugar
1 cup sifted G-Free flour
1 1/2 tsp cream of tartar
1 tsp vanilla
1 cup granulated sugar
1 tbsp xanthan gum

Method:

Set the egg whites out in a large mixing bowl for 30 minutes at room temperature. Meanwhile, sift the powdered sugar and flour together. Set aside. After the egg whites are at room temp; add the cream of tartar and vanilla and mix on high speed until curled peaks come up when you lift the mixer. This takes a few minutes. Add the granulated sugar 1 tbsp at a time, mixing continually. Mix until stiff peaks appear straight up. Then sift 1 cup of the flour mixture at a time into the mixing bowl. Fold the egg mixture over the flour mixture, then add another cup. Repeat until all of the flour mixture is in the egg mix. Pour the batter into a greased bunt cake pan. Run a knife through the batter to make sure there aren't any air bubbles. Stick in the oven at 350 degrees for 40 min.



While you're waiting for the cake to bake, you can make an icing to put over it. Here's what you'll need:

1/2 cup goat cheese
1 cup powdered sugar
1 tsp vanilla
1 tbsp almond milk

Add all the ingredients together into a kitchen aid mixer and mix until the icing is smooth.

After the cake is done baking, flip the cake over onto the cooling rack, but keep the pan on. Let it cool for 10 min. Take the pan off of the cake and let it cool for a bit. Dust and decorate your cake with powdered sugar. Slice and serve with the icing and some fresh berries if desired.



Nully's Tips:
Even though the batter looks amazing, DO NOT EAT IT RAW! It has raw eggs, and that could get you really sick, so just wait until the cake is done baking. It is worth the wait!

Frosted Fudge Brownies





 

Fudge brownies can be made in many different ways. The way I made it is with chocolate chips and chocolate frosting. You could also make it with nuts, or white chocolate chips (my favorite!) This is a super easy recipe, and it’s fun to experiment with. For example, you could dye the frosting green and red for Christmas, or orange for Thanksgiving and Halloween!


Ingredients:½ cup butter
3 oz unsweetened chocolate chips
1 cup sugar
2 eggs
1 tsp vanilla
2/3 cup flour
¼ tsp baking soda
½ cup chopped nuts (optional)
1 batch of your favorite frosting (optional)


Method:

1. In a medium pan melt the butter and chocolate chips over low heat, stirring often. Remove from heat once completely melted and cool.

2. Meanwhile, grease an 8x8x2-inch or 9x9x2-inch baking pan; set aside. Add and stir in the sugar to the chocolate mix until combined, it will look like sand when it’s combined. Add the eggs one at a time, stirring before each addition. Add the vanilla and stir.

3. In a small bowl mix together the flour and baking soda. Add to the chocolate mixture; stir until combined (If desired, pour in nuts) and pour into the prepared pan.

4. Bake in a 350 F oven for 30 min. Cool on a wire rack or in the pan. Once cooled, frost them with your favorite frosting. (Optional)

Chocolate Cream Cheese Frosting:

In a sauce pan melt 1 cup semi sweet chocolate chips over low heat, stirring often. Remove from the heat; cool. In a small bowl, stir two 3 oz packages of softened cream cheese and ½ cup sifted powdered sugar. Add chocolate mix and stir until smooth.

While you’re stirring, you could put
the flour and baking soda in the bowl and
the sugar in the measuring cup. It makes
the job WAY faster and easier!

Chocolate Marble Bundt Cake

Chocolate Marble Bundt Cake
I'd recommend this recipe for beginner bakers. It's a super easy recipe, and it's delicious! I found that it was less challenging than other cakes I've made before, but it was equally rewarding. Plus, it looks adorable.

Ingredients:

3/4 c softened butter
2 eggs
2 3/4 c all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 c sugar
2 tsp vanilla
1 1/4 c milk (I use rice milk)
2/3 c chocolate syrup
1 recipe chocolate icing
a few shakes of powdered sugar (optional)
candied cherries (optional)

You will need:

a cooling rack
spatula
10" fluted tube pan or bundt cake pan
1 small and 1 medium mixing bowl
mixer
measuring cups and spoons
non stick cooking spray
toothpick
sauce pan

Method:

Step one: have butter and eggs sit at room temperature for about 30 minutes. Grease and lightly flour the cake pan. In the medium bowl, mix the baking powder, baking soda, salt and the flour. Set aside.

Step two: With the mixer, beat the butter on low speed, about 30 seconds. Add the sugar and vanilla and beat it until it's fluffy. Add the eggs one at a time. Mix at medium speed for 1 minute after each addition. Scrape the bowl periodically. Add the flour mixture and the milk to the butter alternately, beating on low speed after each addition until mixed. Set aside 2 cups of the batter and pour the rest into the cake pan.

Step three: Mix the chocolate syrup with the 2 cups of reserved batter. Beat until well combined. Pour this into the cake pan on top of the batter. DO NOT MIX!

Step four: Bake in a 350 degree oven for about 50 minutes to until a toothpick inserted in the cake comes out clean. Cool in the pan on a wire rack for 15 minutes. Remove from pan and allow to cool completely.

Step five: Chocolate Icing: While your cake is cooling, prepare the chocolate icing. In a saucepan, heat 1/2 cup of chocolate chips, 2 tbsp butter, 1 tbsp light colored corn syrup and 1/4 tsp vanilla on low heat. Stir constantly until it's melted and smooth. Use immediately.

Once your cake is cooled, place it onto a plate or cake stand. Dust the cake with some powdered sugar and then pour the chocolate icing over the cake. Garnish with candied cherries.
