Artichoke and Asparagus Quiche (Dairy Free)



I know I've already made a quiche, but this time, there's no bacon, no spinach, no onions, and no Dairy. Plus, it's what's for dinner tonight!

Ingredients:

12-15 eggs
1/2-1 cup deli meat (chopped up)
salt and pepper to taste
2 cloves garlic (crushed)
1 can artichoke hearts
2 cups chopped asparagus
1/2 cup goat cheese
1/4 cup almond milk
a dash red pepper flakes
1/8 tsp cayenne pepper
1/4 cup gluten free flour

Method:

Add the cheese, milk, salt and pepper in a large mixing bowl. Stir with an electric mixer until combined. Add the eggs, meat, cayenne pepper, red pepper flakes, artichoke hearts, and asparagus. After the mixture is combined, pour into a greased glass pie pan. Pop in the oven at 375 degrees for one hour. Cut up and serve hot!



Nully's Tips:
If you have to crush your own garlic, you should only put one clove of garlic in a time. That way, you can actually crush the garlic!

Crustless Bacon Quiche

This is a recipe that my mom and I tried out WITHOUT a cookbook! It turned out really well, and it’s one of the easiest recipes ever! You can eat it hot for dinner or cold for breakfast! ... Well, you could have it cold OR hot for breakfast! J




Ingredients:

1 ½ cups cheddar cheese
1 cup mozzarella cheese
1 package bacon - cooked
1 cup chopped sausage - cooked
¼ cup finely diced onions
8 eggs
½ cup milk
1 cup shredded potato
¼ cup flour
1 tsp salt
¼ tsp coarsely ground black pepper
garnish with paprika and red pepper flakes


Method:

First, add eggs and milk. Mix well. Grate the cheese. Add flour and cheese to the egg/milk mix and mix well. Chop the bacon and sausage and add to the mixture. Put the diced onions, shredded potatoes, pepper and salt into the mixture. Mix well. Pour into greased baking dish (like a 9” pie pan) and garnish with paprika and red pepper flakes. Pop in the oven at 350 F for 50 min, or until the eggs are set. Remove from oven and let cool for 5 min, then cut in wedges and serve! J

While the quiche is in the oven, 
why not prepare other things for dinner
as well? I paired it with
asparagus and honey dew
melon slices. Yummy! J
