Ouma Erika's Banana Bread



This is a recipe that was passed down from my Ouma Erika (My mom's mom) to me. It’s yummy and fairly easy. I think the hardest part is mashing the bananas! I’d recommend this recipe for beginner bakers, or people that like bananas. Or bread! =)
 
Ingredients:5 oz. butter (120 grams)
1 cup sugar
2 eggs
3 cups flour
vanilla
1 tsp baking soda
A pinch of salt
120 ml. milk
1 tsp baking powder
4 bananas, smashed
1/2 cup chopped walnuts (optional)
 
Preheat oven to 360 degrees F.
 
 
Method:Mix the butter and sugar in your mixer. Once the mixture is fluffy, add the eggs and mix well. Mix the dry ingredients in a separate bowl and set it aside. Dissolve the baking soda with the milk. Mix the dry ingredients with the baking soda. Add to butter mixture. Mash up the bananas and add to mixture. Add a pinch of salt and the vanilla. Mix well. Be sure to scrape the bowl to ensure everything mixes evenly.  Add the walnuts, if desired, and mix. Pour evenly into two greased bread pans. Put in the oven and bake for 1 hour or until a toothpick inserted in the middle comes out clean.

Add chocolate sauce and
butter to the banana bread
when you serve it to
make it fancier.
(and yummier!)


This recipe came from my Ouma Erika’s cook book. She collected it as a young woman in South Africa, but I'm not sure where she found it.
