G-Free Banana Bread


Ingredients:

2 cups g-free flour mix (We use Bob's Red Mill)
1 tsp baking soda
1/4 tsp salt
4 eggs
4-5 medium bananas (smashed)
1 cup sugar
1/2 cup applesauce
1/3 cup canola oil
1 tsp vanilla
1/2 cup chopped walnuts (optional)
1 tsp xanthan gum (recommended)



Bob's Red Mill All Purpose Baking Flour



Method:

 Mix all the dry ingredients into a large bowl; then mix the wet ingredients with the dry ones. Fill 2 8"x4"loaf pans-coated with cooking spray. Sprinkle with walnuts. (optional)

Bake @ 350 degrees for 45-55 min, until toothpick comes out clean.



Cool for ten min before removing from pan.

Now you're ready to eat!



Tip: The xanthan gum is expensive, so use sparingly, and try not to spill! Luckily, recipes usually only call for 1 or 2 tsp of it, but it really improves the texture of your baked goods, so it's worth the cash.

Xanthan Gum can be expensive, but only a teaspoon or two is used at a time, and it really does make a difference!

Ouma Erika's Banana Bread



This is a recipe that was passed down from my Ouma Erika (My mom's mom) to me. It’s yummy and fairly easy. I think the hardest part is mashing the bananas! I’d recommend this recipe for beginner bakers, or people that like bananas. Or bread! =)
 
Ingredients:5 oz. butter (120 grams)
1 cup sugar
2 eggs
3 cups flour
vanilla
1 tsp baking soda
A pinch of salt
120 ml. milk
1 tsp baking powder
4 bananas, smashed
1/2 cup chopped walnuts (optional)
 
Preheat oven to 360 degrees F.
 
 
Method:Mix the butter and sugar in your mixer. Once the mixture is fluffy, add the eggs and mix well. Mix the dry ingredients in a separate bowl and set it aside. Dissolve the baking soda with the milk. Mix the dry ingredients with the baking soda. Add to butter mixture. Mash up the bananas and add to mixture. Add a pinch of salt and the vanilla. Mix well. Be sure to scrape the bowl to ensure everything mixes evenly.  Add the walnuts, if desired, and mix. Pour evenly into two greased bread pans. Put in the oven and bake for 1 hour or until a toothpick inserted in the middle comes out clean.

butter to the banana bread
when you serve it to
make it fancier.

This recipe came from my Ouma Erika’s cook book. She collected it as a young woman in South Africa, but I'm not sure where she found it.
